Leftover Turkey Casserole





I finally decided to cook that turkey that has been in my freezer for the last few months.  After our having an upright freezer for many years and then to see it die....oh how we take things for granted!  Our only freezer is the one that comes with our frig.  If you are using the same thing you know how space is limited.  I was glad to get the turkey out of there.  I wanted to share a dish with you that my children really liked.  It does not have a strong taste but it was really great and I plan on cooking it again really soon.

 Leftover Turkey Casserole


3 Cups of cooked rice

1/3 Cup onion

1/2 tsp curry powder

1 can of cream of mushroom soup

1/2 Cup of milk

2 Cups of chopped turkey

Chopped Olives

Shredded Cheese
 
Preheat your oven to 350.  Chop unions really fine. Mix the curry powder and chopped onions to the bottom of the shallow casserole dish.  When the rice is done cooking spread the rice on top of the onion mixture.  In a bowl mix the cream of mushroom and milk.  Once you have mixed that spread the mixture on top of the rice.  Spread chopped olives on top of the cream of mushroom mixture.  Once you have done that you can top with cheese and place it in the oven for 30 minutes.  
 
What is great is you can use different kinds of meats with this. You can also add veggies if you like.
